Passatelli, a dish for great occasions!
Recipe for four people:
2 or 3 eggs - 200 grammes of Parmesan cheese - 200 grammes of fine bread crumbs - grated lemon peel - nutmeg - a pinch of salt.
Combine the ingredients and knead until a consistent mixture is obtained. Leave to sit for one hour.
Using the appropriate implement (a large hand press with round holes at the bottom, similar to a garlic press), press the mixture and allow the resulting passatelli to fall into a previously prepared pot of boiling broth.
As soon as the passatelli begin to float, the dish is ready to be served.
For a modern recipe: passatelli accompanied by a sauce made of tomatoes, bacon and rucula.
